Greek Salad Pitas
A quick an easy weekday lunch recipe! Have it vegetarian or add in some grilled chicken for extra protein.
pita pocket sliced in half, toasted
grape tomatoes, halved
peperoncini peppers, chopped
kalamata olives, chopped
shredded lettuce or arugula (whichever you prefer)
tzatziki sauce (we use Cedar's brand but you can also make your own from scratch)
salt and pepper to taste
Pop your pita pocket in the toaster oven. While toasting, add all of your prepared ingredients in a mixing bowl and combine until tzatziki is evenly distributed.
Stuff your pita pockets with your salad mixture & enjoy!
Variations: Add grilled chicken, diced red peppers or red onion
