Ingredients
1pita pocket sliced in half, toasted
1/3 ccucumber, chopped
1/3cgrape tomatoes, halved
1/4cpeperoncini peppers, chopped
1/4 ckalamata olives, chopped
1handfulshredded lettuce or arugula (whichever you prefer)
2tbsp.feta cheese
2heaping Tbsp.tzatziki sauce (we use Cedar's brand but you can also make your own from scratch)
salt and pepper to taste
Instructions
Pop your pita pocket in the toaster oven. While toasting, add all of your prepared ingredients in a mixing bowl and combine until tzatziki is evenly distributed.
Stuff your pita pockets with your salad mixture & enjoy!

Variations: Add grilled chicken, diced red peppers or red onion
