Greek Salad Pitas
I always have a hard time with lunch ideas, so when I find a good one, I stick with it! These easy Greek salad pitas are one of my favorites. You can have them vegetarian or add grilled chicken; whatever you prefer. I like to prep ahead most of the ingredients ahead of time, so when it comes time to make everything, it's just a matter of mixing everything together and toasting your pita. That said, they're about a 10 minute meal regardless.

Greek Salad Pitas
A quick an easy weekday lunch recipe! Have it vegetarian or add in some grilled chicken for extra protein.

Ingredients
- 1 pita pocket sliced in half, toasted
- 1/3 c cucumber, chopped
- 1/3 c grape tomatoes, halved
- 1/4 c peperoncini peppers, chopped
- 1/4 c kalamata olives, chopped
- 1 handful shredded lettuce or arugula (whichever you prefer)
- 2 tbsp. feta cheese
- 2 heaping Tbsp. tzatziki sauce (we use Cedar's brand but you can also make your own from scratch)
- salt and pepper to taste
Instructions
- Pop your pita pocket in the toaster oven. While toasting, add all of your prepared ingredients in a mixing bowl and combine until tzatziki is evenly distributed.
- Stuff your pita pockets with your salad mixture & enjoy!
Notes
Variations: Add grilled chicken, diced red peppers or red onion
